Easy Southern Corn Casserole

I am not a Southerner, but I love some good, old-fashioned home cooking. A year-or-so ago, I tried a Southern Corn Casserole recipe and I was HOOKED. After a bit of trial and error, I finally crafted this version which – to me – is the best Southern Corn Casserole Recipe you can ever hope to make in less than 5 minutes!

It is so easy to make and such a perfect side dish to go along with a family-style dinner. It goes just as well with a rustic meat loaf, deep fried chicken, or a traditional turkey.

You really can’t go wrong!

What I love about this recipe is that it is gets just the right amount of sweetness from the corn without becoming an overly sweet side dish.

The richness and creaminess flows through the dish, so that it tastes and feels almost like a rustic souffle.

I’ve made it about a dozen times, and everyone who has tried it has absolutely loved it. They are always going back for seconds!

An Easy to Make Southern Corn Casserole

Once you have all of the ingredients pulled together, it takes less than 5 minutes to whip up this delicious dish and get it into the oven.

I do recommend Jiffy Corn Muffin Mix, but you can experiment with the brand of your choice.

All you have to do is melt the butter while you are whisking up a couple of eggs.

Next, add all of the ingredients (EXCEPT THE CORN) in a mixing bowl and mix until smooth.

Add the corn and mix again until it’s all blended nicely together

Throw it all in a casserole dish and pop it in the oven.

If you so desire, you can take it out 10 minutes before it’s done, top it with some shredded cheddar cheese and green onion, and put it back in the oven for the final 10 minutes. I’ve tried this as well (during one or two of my experiments). It’s a nice additional, but I don’t find it adds enough to warrant the extra work.

Note: For the vegetarians in your life, the standard Jiffy Corn Muffin Mix does include a touch of lard in the recipe, but they do offer a vegetarian version for those with dietary restrictions.

Easy Southern Corn Casserole

Equipment

  • Mixing Bowl
  • Measuring Spoons & Cups

Ingredients

  • 1/2 Cup Milk
  • 2 Large Eggs Beaten
  • 1/2 Cup Butter Melted
  • 1 8.5 oz Package Jiffy Corn Bread Mix
  • 1 15 oz can Whole Kernel Corn Partially Drained
  • 1 15 oz can Creamed Corn
  • 1 Cup Sour Cream
  • 1 Tsp Garlic Powder

Instructions

  • Preheat oven to 350 degrees F (175 degrees C)
  • Grease a casserole dish
  • Beat the eggs in a medium-sized mixing bowl
  • Add Metled butter, milk, sour cream, and corn bread mix and whisk until smooth
  • Add creamed and whole kernel corn and mix until thoroughly plended
  • Pour mixture into greased casserole dish
  • Bake for 1 hour
