Jim Beam Bourbon BBQ Meatloaf with Mushroom Glaze

Your mom's meatloaf just got an adult upgrade. This hearty meatloaf has a bit of tang and a bit of heat thanks to the homemade Jim Beam BBQ Sauce added to the mix.

Ingredients

Meatloaf

  • 2 Lbs Lean Ground Beef
  • 1 Cup Plain Bread Crumbs
  • 1 Large Egg
  • 1 Pouch Lipton's Onion Soup Mix
  • 1 Tbsp Badia Complete Seasoning
  • 1 Cup Jim Beam Bourbon BBQ Sauce See Separate Recipe
  • 1 Medium Onion Finely chopped

Mushroom BBQ Glaze

  • 1 Tbsp Butter or Margarine
  • 1 Pkg Sliced Mushrooms
  • 1/2 Cup Jim Beam Bourbon BBQ Sauce See Separate Recipe

Instructions

Meatloaf Base

  • Preheat oven to 350 degrees F (175 degrees C)
  • Mix all ingredients in a large mixing bowl
  • Place in loaf pan, make sure to press down the edges to keep juices from overflowing
  • Bake for 40 Minutes

Mushroom BBQ Sauce Glaze

  • While the meatloaf is baking Saute Mushrooms with butter or margarine into nicely browned
  • Do not overcook the mushrooms as they will brown more while baking with the meatloaf
  • Add 1/2 Cup of Jim Beam Bourbon BBQ Sauce and mix
  • Remove from heat and set aside

Putting it Together

  • Take meatloaf out of the oven and spoon the Mushroom BBQ sauce mixture on top
  • Return to the oven for 20 minutes to finish baking. This will also finish browning the mushrooms in the mushroom glaze.
